Cookie Dough Truffles

Creamy peanut butter, chocolate chip truffles, dipped in chocolate and garnished with melted white chocolate.
 

Ingredients

  • 1 1/4 cups butter, softened
  • 1 cup smooth peanut butter
  • 2 cups confectioner's sugar
  • 4 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup mini semi-sweet chocolate chips
  • 4 cups semi-sweet chocolate chips
  • 4 teaspoons solid vegetable shortening
  • 1/2 cup white chocolate chips (garnish)

Method

Cream butter, peanut butter, vanilla and confectioner's sugar until smooth and creamy, stir in flour and salt until well blended. Stir in mini chocolate chips. Refrigerate at least 2 hours or until firm enough to roll into balls. When dough is firm, roll dough into 1 inch balls and place on waxed paper lined cookie sheet, freeze until hard. Melt chocolate chips and vegetable shortening slowly over a double boiler. Working with only 1/4 of the dough balls at a time (keep remaining balls frozen), dip balls in melted chocolate, shake off excess chocolate. Place candies on waxed paper lined cookie sheets. Refrigerate for 15 minutes to set chocolate. In a microwave safe bowl, heat white chips on high for 30 seconds, stir. Continue to heat and stir until chips are melted. Place white chocolate in a plastic zippered bag and snip off a tiny portion of one corner. Use chocolate to drizzle and decorate lines or patterns over candies. To serve, allow candies to come to room temperature. Store candies in the refrigerator or freezer for later use.

 

Notes: This recipe can be easily halved. The white chocolate garnish can be tinted any color for a more festive holiday look.
