Coffee Crumb Cake

Serve this beautiful cake with coffee or tea in the morning or afternoon. The cinnamon crumbs are tasty and light.
 

Ingredients

  • Ingredients for Cake:
  • 2 eggs
  • 1/2 cup margarine
  • 1 cup granulated sugar
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup buttermilk
  • --Crumbs:
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 teaspoons cinnamon

Method

Preheat your oven to 325 degrees. Beat eggs in a large bowl, than add the margarine and slowly stir in the sugar. After mixing well, but not over mixing, slowly add the flour, salt, baking soda and baking powder. After completely being mixed together, pour in the buttermilk slowly for the right consistency, then add the vanilla. While your oven is still preheating, set aside the cake batter and pull aside a small sized bowl for the crumbs. Mix the light brown sugar, granulated sugar, and cinnamon until a nice brown color and the consistency of crumbs. Grease an 8, 9 or 10 inch pan, place 1/2 of the cake batter in the pan and add 1/2 of the crumbs on top to cover the batter, then add the rest of the batter and crumbs. Bake for 45 - 50 minutes, until a toothpick comes out clean, usually takes a couple of tries.
