If you have your own ice cream maker, this recipe will soon become a favorite of yours. Fresh peaches and coconut flavor this frozen treat perfectly.
Place sugar and water in a saucepan. Stir over medium heat until sugar dissolves, then raise heat, bring syrup to a boil and boil for 5 minutes. Transfer syrup to a bowl and let cool completely. Puree peaches in a food processor. While pureeing, add coconut cream and milk, then puree thoroughly. Stir in coconut flakes, 1 1/2 cups heavy cream and lemon juice. Add puree to syrup and chill completely. Whip remaining 1 cup cream until soft peaks form, and then fold into puree. Pour mixture into bowl of ice cream machine and follow manufacturer's instructions.
