Citrus-Sweet Potato Pudding

Sweet potatoes are combined with corn syrup, orange peel, eggs and butter and are baked. Top with yogurt, orange juice, coconut and mandarin oranges.
Ingredients
- Pudding:
- 2 cups grated raw peeled sweet potatoes
- 2/3 cup light-colored corn syrup
- 1 tsp grated orange zest
- 1/4 tsp salt
- 1 1/2 tsp baking powder
- 2 Tbsp butter, melted
- 2 eggs, beaten
- Topping:
- 1 can (15 ounces) mandarin orange segments, drained
- 1 cup vanilla yogurt
- 1/4 cup flaked coconut
- 1 Tbsp frozen orange juice concentrate, thawed
- 1 small banana, diced
- Garnish--pecan pieces and mint sprigs

Method
Combine the sweet potatoes and the rest of the ingredients for the pudding in a medium bowl till well mixed. Put into a buttered 1-quart casserole. Bake at 350 degrees 50 minutes or till the pudding is set and lightly browned on top. Combine the ingredients for the topping in a medium bowl till well blended. Serve the pudding warm with the fruit topping. Garnish each serving with pecans and mint.
