
Dried cranberries, raisins and dates are soaked in water, combined with sugar, cornstarch, and walnuts, and baked in a lattice-topped pastry.
Soak dried fruit in water at least 15 minutes. Then mix in sugar and cornstarch. (Hold the walnuts aside.) Divide pie dough into two balls. Roll out one part of pie dough and place in 9 " pie pan. Add the fruit mixture. Top with chopped walnuts. Roll out remaining crust, then finish pie with a lattice crust. Bake for 40 minutes at 375 degrees.
Notes:
Serve warm or cold with vanilla ice cream or whipped cream or with a slice of cheddar cheese.
