Christmas Cream Puff Wreath


A cream puff dough, baked in a ring, is filled with vanilla & chocolate puddings, glazed with chocolate frosting and sprinkled with cherries.



Ingredients:

  • Pastry:
  • 1/2 cup butter
  • 1 cup water
  • 1/4 teaspoon salt
  • 1 cup flour
  • 4 eggs
  • Filling:
  • 1 (3.4 ounce) package chocolate fudge pudding mix
  • 1 (3.4 ounce) package French vanilla pudding mix
  • 2 1/2 cups milk (divided)
  • 1 pint whipping cream, whipped (divided)
  • Glaze:
  • 1 (16 ounce) container or tub of prepared chocolate frosting
  • 1 (4 ounce) jar red maraschino cherries, cut in 1/4ths
  • 1 (4 ounce) jar green maraschino cherries, cut in 1/4ths

Method

Cover a large baking sheet with foil. With a pencil trace a 7- to 8-inch circle in the middle of the foil, using a plate as a guide. Spray foil well with non-stick cooking spray. Preheat oven to 400F. In a 2-quart saucepan over medium heat combine butter, water and salt; bring to a boil. Add flour and stir until mixture forms a ball. Remove from heat. Cool 5 minutes. Add eggs one at a time, beating well after each addition. Drop batter by heaping tablespoons in a circle on the inside of the ring that was traced on the foil. Bake for 30-40 minutes until golden and firm. Don't underbake. Turn off oven and leave baked pastry inside for 15 more minutes. Remove and cool on a wire rack. With a sharp knife cut pastry ring in half horizontally. With a spoon carefully remove any doughy bits inside. To make filling place 1 1/4 cup milk in each of two bowls, followed by vanilla pudding mix in one and chocolate pudding mix in the other bowl. Whisk until smooth, and then fold half of the whipped cream into each pudding mixture. Spread vanilla pudding on pastry bottom, and then carefully spread chocolate pudding over it. Replace pastry top. Place frosting in the microwave and heat on high for 10 seconds or until pourable. Drizzle over filled pastry; sprinkle with red and green maraschino cherries. Serve immediately or chill until serving time.

Notes: This delicious pastry is a little bit time-consuming to prepare, but worth it for the great presentation this makes at the end of your holiday dinner. Not only will it "Wow" your guests, it's also very tasty.
