Christmas Breakfast Cookies

These Christmas breakfast cookies are really homemade Pop-Tarts only so much more fresh and delicious.
Ingredients
- 1 cup all purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1 stick unsalted butter
- 2 tablespoons cold water
- 1 cup jam
- Powdered sugar

Method
Preheat oven to 375 degrees. Place flour, salt and sugar in a bowl. Cut butter into small pieces and work flour mixture and butter together until well blended. Sprinkle water over mixture and work dough until smooth. Wrap in plastic and let dough rest 30 minutes. Roll out dough on a lightly floured surface, about one eighth inch thick. Cut into 3 X 5 inch shapes yielding 8 rectangles. Use a pastry scraper to place 4 bottoms on a cookie sheet lined with parchment paper. Place 3 tablespoons jam onto center of each. Arrange 4 pastry tops over jam centers. Press edges with a fork until each tart is completely closed. Bake 25 minutes or until tarts are golden brown. Serve immediately with a sprinkling of powdered sugar.
