
Prepare this chocolate pudding mixture made with cocoa powder for the pie filling. Top with a sweet meringue and bake.
Mix sugar, cocoa, cornstarch, and salt in a saucepan. Stir in milk; cook, stirring constantly until mixture boils. Cook and stir 1 minute. Stir 1/2 of hot mixture into beaten egg yolks and add back to mixture in saucepan. Cook and stir 1 minute more. Blend in butter and vanilla. Pour immediately into pastry shells.
For meringue, beat egg whites, cream of tartar, and vanilla with an electric mixer until soft peaks form. Gradually add sugar and beat until stiff peaks form. Top chocolate mixture with meringue. Bake at 350 degrees for 15 minutes. Cool completely.
