Chocolate Pots de Creme


This rich, baked, chocolate pudding is made with cream, egg yolks, sugar, vanilla, and chocolate chips. It's served topped with whipped cream.



Ingredients:

  • 1 1/2 cups half-and-half or light cream
  • 1/3 cup sugar  
  • 1 cup (6 oz) semisweet chocolate chips  
  • 4 large egg yolks, beaten  
  • 2 tsp vanilla extract  
  • Whipped cream

Method

Preheat oven to 350 degrees. In saucepan, bring half-and-half and sugar to a simmer, stirring occasionally. Remove from heat; add chocolate. Let stand 30 seconds; stir until chocolate melts. Whisk in yolks and vanilla. Pour into six (6 oz.) custard cups or ramekins. Place cups in 13x9 baking pan. Pour hot water into pan halfway up sides of custard cups. Bake 25-30 minutes, until almost set in centers. Remove cups to rack; cool slightly. Serve warm for a softer texture, or refrigerate overnight for a firmer set. Serve with whipped cream.
