A creamy mint flavored pie in a chocolate cookie crumb crust--drizzle with melted chocolate for an elegant finish.
In a mixing bowl combine cookies and melted butter; mix thoroughly to combine. Place crumb mixture into 9 inch pie pan. Spread crumb mixture evenly into pie plate. Press onto bottom and up sides to form a firm even crust. Chill about 1 hour or until firm. Pour heavy cream into chilled mixing bowl. Chill bowl in freezer for 10 minutes. Add granulated sugar, mint extract, and green food dye. Whip on high for about 2- 3 minutes or until light and fluffy. Do not over mix. Spread filling evenly into pie crust and chill. Melt chocolate chips in double boiler. Once completely melted add heavy cream and stir to combine. Set melted chocolate aside and cool for 15 minutes. Using a slotted spoon or plastic squeeze bottle drizzle melted chocolate over pie filling. Chill until chocolate hardens. Cut pie into eight pieces.
Notes:
Coconut, almond, or vanilla extract can be substituted for the mint extract. Omit food dye if not using mint extract.
