A traditional candy recipe, that still tastes great today--creamy candy with pecans, dates and orange flavor.
In medium saucepan heat sugar, evaporated milk, butter and salt. Stir until sugar is dissolved, then boil over medium heat until soft ball stage (238 degrees).
Add dates, orange rind and pecans. Let cool 10 minutes, then beat until creamy and stiff.
Form into rolls 1 1/2" thick on damp dish towel.
Roll up in waxed paper and let stand to ripen several hours.
When well hardened, slice 1/2" thick. Dip half of each slice into melted chocolate.
Place separately on waxed paper and let stand until coating has hardened.
Notes:
My mother made date nut candy every Christmas, and I have continued to do so ever since I began to cook. Since I am 84 years old, that means it has been part of my family's Christmas preparations for about a hundred years.
It is not surprising that such a great recipe has lasted a century, it is that good.
