Chocolate Raspberry Cakes

This batter of butter, sugar, eggs, flour and evaporated milk has raspberries folded into it. It's spooned into muffin cups and a chocolate Kiss is placed in the center, then baked and served warm.
 

Ingredients

  • 3/4 cup granulated sugar
  • 1/2 cup (1 stick) butter, softened
  • 2 large eggs
  • 1/4 cup evaporated milk
  • 1 tsp. vanilla
  • 1 cup all-purpose flour
  • 1/4 tsp. salt
  • 1/4 tsp. baking powder
  • 1 cup raspberries
  • 10 chocolate Kiss candies
  • Powdered sugar

Method

Preheat oven 350 degrees; grease 10 muffin cups. Beat sugar & butter until combined. Add eggs, evaporated milk, & vanilla until blended. Stir in flour, baking powder and salt. Gently fold in raspberries. Spoon a heaping tablespoon of batter in each muffin cup. Place one candy in each cup, cover completely with another heaping tablespoon of batter. Bake 20 minutes until golden brown, cool in pan for 10 minutes. Loosen gently and serve warm, sprinkled with powdered sugar.
