Chocolate-Peanut Butter Surprise Pie

Melted chocolate chips are combined in a food processor along with tofu and peanut butter, then transferred to a graham cracker crust to chill.
 

Ingredients

  • 9 Graham Crackers
  • 1/4 cup Canola Oil
  • 2 1/4 cups Semi-Sweet Chocolate Chips
  • 2, 12 oz boxes extra firm Silken Tofu
  • 1/2 cup Creamy Peanut Butter
 
Method

In a food processor, grind graham crackers into crumbs (about 1 1/2 cups). Slowly pour canola oil into food processor while it is on. Transfer graham crumb mixture into a pie pan; spread out and pat evenly. (Rinse off food processor bowl and blade.) Melt 2 cups of chocolate chips in a double broiler. (Save remaining 1/4 cup of chocolate chips for garnish.) Meanwhile, mix tofu in a food processor until creamy and smooth. (Occasionally scrape down sides, to process any stray tofu curds.) Add melted chocolate and peanut butter. Mix until color is completely chocolate-brown, without white streaks of tofu. Pour chocolate mixture into prepared pie pan. Chill at least an hour (longer if more convenient). Just before serving, decorate the pie top with remaining 1/4 cup of chocolate chips.

 

Notes: Don't let the tofu scare you! This pie is delicious. It's healthier than eating regular chocolate mousse, and a lot easier to make! Children LOVE this pie, and you can feel good about them eating it. Even grown-ups, who normally turn up their noses at tofu, will come back for a second slice. That's when you may want to tell them, "Surprise! You're eating tofu!"
