Chocolate Coconut and Cream Cheese Crispy Bars

Crisp rice cereal & flaked coconut are folded into melted butter, cream cheese & marshmallows, pressed in a pan, and topped with a chocolate layer.
Ingredients
- 1 stick (1/2 cup) salted butter
- 1 pkg cream cheese
- 1 16 oz bag miniature marshmallows
- 1 cup flaked coconut
- 1 tsp vanilla
- 6 cups Rice Krispies
- 1 pkg semisweet chocolate chips
- 1 tsp vanilla

Method
In large saucepan, melt butter and cream cheese over low heat. Once melted, add in marshmallows, stirring constantly. When almost completely melted, stir in coconut and vanilla until well combined. Add Rice Krispies, 2 cups at a time, until all are well coated. Press mixture firmly into buttered 13x9" pan or dish. (Place a piece of waxed paper over the surface to help when pressing.) Cool about 30 minutes. Place chocolate chips in a small, heavy saucepan over very low heat (or in top of double boiler); stir to melt completely then stir in vanilla. Spread chocolate mixture over cooled Rice Krispies mixture. Let cool completely until chocolate is firm to touch. Cut into bars.
