Chocolate Chocolate Macadamia Cookies

Chocolate chips and macadamia nuts make these crisp chocolate cookies extra rich and delicious.
Ingredients
- 1/2 cup butter, softened
- 1/2 cup shortening
- 1 1/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 2/3 cup cocoa powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups mini chocolate chips
- 2/3 cups macadamia nut halves

Preheat oven to 350 degrees. In a large bowl, beat butter, shortening, sugar, eggs and vanilla until light and fluffy. Combine flour, cocoa, baking soda and salt, then stir into butter mixture until well blended. Mix in chocolate chips. Form into walnut sized balls and place 3-4 macadamia nut halves in each dough ball. Bake on an ungreased cookie sheet for 10 minutes or until set. Cool 2 minutes on cookie sheet then transfer to a wire rack.
Notes: Makes large yummy cookies. If cookies come out hard, stick a piece of bread with cookies in an airtight container. My kids don't get the lid on the tupperwear all the way, so every time I make cookies I stick a piece of bread in, and it works wonders.
