What a delicious dessert, chocolate, cherries, cheesecake. What a dynamic combination.
Crust:
Mix chocolate cookie crumbs, butter, and sugar and press firmly into a 9" spring form pan and set aside.
Preheat oven to 350 degrees.
Filling:
In a medium bowl, using an electric mixer, mix softened cream cheese with sugar until smooth. Add one egg at a time, mixing well after each egg. Add sour cream to bowl and blend until smooth and set aside. In a medium microwave safe bowl, add chocolate chips, chocolate vodka, coffee liqueur, Irish cream liqueur, and butter. Microwave until melted and stir well. Add cherry extract and stir. Add 1/2 chocolate and liqueur mixture to filling mix and stir in by hand. Pour into crust pan.
Use a spoon to drizzle some remaining chocolate and liqueur mix on top of cheesecake. With a knife, swirl mixture. Bake 35-40 minutes or until filling is barely set in center. Turn off heat, and let stand in oven for 20 minutes with door slightly ajar. Remove from oven and let stand at room temperature for 1 hour, then refrigerate until firm. Garnish with cherry pie filling and whipped topping
.
Notes:
Place an oven safe bowl filled 1/2 with water on the bottom rack of oven. This will help prevent cracking on cheesecake.
