
A crust of flour, brown sugar, butter-flavored shortening and coconut is topped with a cream cheese, sugar and egg filling, sprinkled with crumbs and baked. Cherry pie filling is the topper.
Preheat oven to 350 degrees. Grease a 13x9" pan with butter-flavor shortening. Set aside. Coarsely chop 1/2 cup nuts for topping. Finely chop remaining nuts. Set aside.
For crust, combine flour and brown sugar. Cut in shortening until fine crumbs form. Add 1/2 cup finely chopped nuts and coconut. Mix well. Remove 1/2 cup of this mixture and set it aside. Press remaining crumbs in bottom of pan. Bake at 350 degrees for 12 to 15 minutes, until edges are lightly browned.
Meanwhile, for filling, beat together cream cheese and sugar; beat in eggs, one at a time, and vanilla. Pour over crust. Combine the reserved 1/2 cup of crust mixture and coarsely chopped nuts. Sprinkle over cream cheese layer. Bake about 20 to 25 minutes until firm. Cool thoroughly, then spoon cherry pie filling on top; chill.
