Cheesecake Brownie Crepes


Homemade crepes filled with rich and creamy cheesecake brownies perfectly finished off with hot fudge sundae topping, this is a kid friendly dessert if I have ever heard of one.



Ingredients:

  • 1 box brownie mix
  • 8 oz cream cheese, softened
  • 1 cup sugar
  • For Crepes:
  • 4 eggs, lightly beaten
  • 1 1/3 cups milk
  • 2 tablespoons butter, melted
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 teaspoon of lemon extract
  • Topping:
  • Hot fudge sundae syrup

Method

Mix cream cheese and sugar together. In a bowl, mix brownie ingredients together. Place in a baking dish, then add cream cheese mixture and swirl in. Bake as directed. When done, set aside to cool off. Whisk together eggs, milk, melted butter, flour and sugar until smooth. Heat a medium-sized omelet pan on medium heat. Using a small ladle, spoon crepe batter into hot pan, tilting the pan so that bottom surface is evenly coated. Cook over medium heat, 1 to 2 minutes on each side. Cut up brownies into small squares and put into crepes. Fold crepes up, and pour hot fudge on top.
