Cheery Cherry Haystacks


This dessert combines the flavor of chocolate covered cherries with crunchy chow mein noodles for a great bite.



Ingredients:

  • 24 oz bittersweet chocolate, chopped fine
  • 3 cups crispy chow mein noodles
  • 1 cup sweetened coconut flakes
  • 1 cup pecan pieces
  • 1 cup mini marshmallows
  • 1 cup marachino cherries, drained, quartered and dried thoroughly with paper towels

Method

Fill large soup or stew pot halfway with water. Bring to boil and reduce to simmer. Place large bowl over pot. Place chocolate in bowl and stir frequently to melt thoroughly. Be careful to not let any liquid get into chocolate. While chocolate is melting, in a separate bowl gently toss together noodles, coconut, pecans, marshmallows and cherries. When chocolate is thoroughly melted add noodle mixture all at once and gently stir to combine. Drop by heaping tablespoons onto prepared sheet pan covered with parchment paper. Chill until chocolate is set.

Notes: This recipe is simple and satisfies all taste buds. I've made it year after year for family gatherings and it's always been a favorite. You can easily personalize it by changing the types of nuts, chocolate combinations or fruits.
