Caramel-topped Apple-filled Rice Pudding

Minute rice is cooked in apple juice, then combined with prepared vanilla pudding mix, layered with apple pie filling, and drizzled with caramel topping.

¾ cup Apple Juice
½ cup Instant Rice
1× 3-oz pkg Vanilla Pudding & Pie Filling Mix
2 cups Milk
1× 21-oz can Apple Pie Filling
½ cup Caramel Ice Cream Topping


Bring apple juice to a boil in a medium saucepan over high heat. Stir in instant rice. Reduce heat to low, then cover and simmer for 2 minutes. Remove from heat and allow to stand for 5 minutes. Prepare pudding mix with milk according to package directions. Stir in rice. Pour half of the rice pudding mixture into a glass 2-quart serving bowl. Spoon apple pie filling evenly over top. Spoon on remaining pudding. Drizzle with caramel ice cream topping. Serve warm or cold.
