Caramel-topped Apple-filled Rice Pudding

|¾ cup||Apple Juice|
|½ cup||Instant Rice|
|1× 3-oz pkg||Vanilla Pudding & Pie Filling Mix|
|1× 21-oz can||Apple Pie Filling|
|½ cup||Caramel Ice Cream Topping|
Bring apple juice to a boil in a medium saucepan over high heat. Stir in instant rice. Reduce heat to low, then cover and simmer for 2 minutes. Remove from heat and allow to stand for 5 minutes. Prepare pudding mix with milk according to package directions. Stir in rice. Pour half of the rice pudding mixture into a glass 2-quart serving bowl. Spoon apple pie filling evenly over top. Spoon on remaining pudding. Drizzle with caramel ice cream topping. Serve warm or cold.
This recipe is a delicious as it is easy to prepare. My family thinks it's a winner.
