Caramel Apple-Peanut Cheesecake

The cream cheese filling is topped with sliced apples and sprinkled with chopped peanuts, then drizzled with caramel apple topping after baking.
Ingredients
- Crust:
- 1 cup graham cracker crumbs
- 3 tablespoons sugar
- 1/4 cup melted butter
- 1/2 cup finely chopped peanuts
- Filling:
- 2, 8 oz pkgs cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1/2 teaspoon vanilla
- Topping:
- 4 cups apple, peeled and sliced thin, I prefer Fuji or Gala
- 1/4 cup lemon juice
- 1/3 cup sugar
- 1/4 cup chopped peanuts
- 1/4 cup caramel ice cream topping

Method
Crust: Preheat oven to 350 degrees. Combine crumbs, sugar, butter, and peanuts. Press into a 9 inch springform pan and bake 10 minutes. Filling: Combine cream cheese and sugar until well blended. Add eggs one at a time, mixing on low speed after each. Blend in vanilla and pour mixture onto crust. Topping: Toss apples with lemon juice then with sugar. Spoon apple mixture over cream cheese mixture and sprinkle with peanuts. Bake at 350 degrees for 1 hour. Loosen cake from edge of pan and let cool before removing side of pan, then chill. Before serving drizzle caramel topping over cheesecake.
Notes: The lemon juice prevents apples from browning, but it may be omitted if necessary.
