Butterscotch Peanut Butter & Peanut Brittle Pie

A graham cracker crust filled with creamy peanut butter and peanut brittle then topped with whipped topping and more peanut brittle.
Ingredients
- Crust:
- 1 1/2 cups finely crushed graham cracker crumbs
- 2 tablespoons packed light brown sugar
- 1 tablespoon creamy peanut butter
- 5 tablespoons unsalted butter, melted
- Filling:
- 3 ounces cream cheese at room temperature
- 3 tablespoons creamy peanut butter
- 1 teaspoon vanilla extract
- 1 cup packed light brown sugar
- 1/3 cup all purpose flour
- 1/4 teaspoon salt
- 1 3/4 cups half and half
- 3 large egg yolks
- 1/3 cup coarsely crushed peanut brittle candy
- Peanut Butter Peanut Brittle topping:
- 1 cup heavy cream
- 4 tablespoons powdered sugar
- 3 tablespoons creamy peanut butter
- 1 teaspoon vanilla extract
- 3 tablespoons coarsely chopped peanut brittle candy

Preheat oven to 325 degrees. Butter bottom and sides of a 9 inch pie plate. Crust: Combine graham cracker crumbs and brown sugar in a medium bowl. Stir peanut butter into melted butter then add to crumb mixture and toss until crumbs are coated. Press crumb mixture over bottom and up sides of pie plate. Bake crust 8 minutes, remove to a wire rack, and cool 15 minutes. Filling: In a small bowl, beat cream cheese, peanut butter and vanilla together until smooth then set aside. In a heavy 2 qt. saucepan, whisk together brown sugar, flour and salt. Whisk in half and half with egg yolks then place over medium heat and cook, whisking constantly, until mixture thickens, 8-10 minutes. Remove from heat and drop cream cheese mixture by tablespoonfuls into filling and stir until well blended. Cool 10 minutes then stir in peanut brittle. Pour filling into crust and let set at room temperature 45 minutes, then cover and refrigerate at least 6 hours. Topping: Prepare topping just before serving pie by beating cream in a deep bowl until soft peaks form. Gradually add powdered sugar, beating constantly, until very stiff peaks form. Add peanut butter and extract then beat until well blended and spread over pie. Sprinkle with peanut brittle and serve.
Notes: Use a quality brand peanut brittle for best results. Great pie to serve during the holidays.
