Breakfast Strawberry Pecan Torte

This breakfast torte makes a beautiful presentation and is a great way to use fresh strawberries from the farmer's market.
Ingredients
- Topping:
- 2 pints fresh halved strawberries
- 1 cup pecan halves
- 1 cup real warm maple syrup or to taste
- Torte:
- 1 cup flour
- 1 tbsp light brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 1 large egg
- 6 oz vanilla or strawberry yogurt
- 2 tbsp extra virgin olive oil
- 1 tsp pure vanilla extract
- 1 cup sliced strawberries
- 1/2 cup pecan pieces

Preheat oven to 350 degrees. Coat a 10 inch nonstick spring form pan with cooking spray. In a large bowl, whisk together first five ingredients. In another bowl, beat together egg, yogurt, oil and vanilla. Add egg mixture to dry ingredients, stirring just until combined. Fold in sliced strawberries and pecan pieces. Pour batter into prepared spring form pan, spreading evenly with a spatula. Bake 25-30 minutes, or until a tester inserted into center comes out clean. Remove from oven and remove ring then allow to cool briefly. Arrange strawberry halves, cut side up, alternating with pecan halves on top of torte. Brush with warm maple syrup for a nice glaze and cut into 6 portions. Serve with additional warm maple syrup on the side.
Notes: It is very important to present the torte in it's full beauty table side, so not to lose the maple syrup.
