Bread Pudding with Butterscotch Caramel Topping


This bread pudding is made with cubes of egg bread (Challah), plus eggs, cream, milk and spices. Purchased butterscotch-caramel sauce tops it.



Ingredients:

  • 1 cup heavy whipping cream
  • Challah bread (egg bread)
  • 1/2 cup milk
  • 2 egg yolks and 1 whole egg, beaten together
  • 1 Tbsp sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • Vanilla or vanilla bean ice cream
  • Butter
  • 1/3 cup Smuckers butterscotch-caramel sauce
  • 2 Tbsp cream or milk

Method

Cut bread into 1-inch squares. In a bowl combine beaten egg yolks and egg, the 1 cup cream, the milk, vanilla, sugar, cinnamon and nutmeg. Pour over cubed bread, pressing down so all bread is soaked. Let stand about 10 minutes while pre-heating oven to 350 degrees. Pour into buttered 9x9" baking dish. Bake for 45 minutes or until bread is golden brown and puffed. Remove from oven. In a separate bowl stir together 1/3 cup butterscotch-caramel sauce and 2 tablespoons whipping cream; microwave about 45 seconds. Drizzle over bread pudding. Serve with ice cream.

Notes: I like this served in a martini glass with butterscotch caramel sauce in the bottom of the glass, topped with a large scoop of bread pudding and a small scoop of ice cream with a little more butterscotch caramel sauce on top. It makes for a beautiful presentation.
