Bread Pudding with Warm Caramel Sauce

The ultimate comfort food--a cinnamon flavored pudding with an ultra creamy caramel sauce.
Ingredients
- 8 cups cubed day old croissants
- 1/2 cup white raisins, optional
- 1/3 cup rum, optional
- 12 eggs
- 2 1/4 cups milk
- 1 3/4 cups heavy whipping cream
- 1 cup sugar
- 3/4 cup unsalted real butter, melted
- 3 teaspoons vanilla extract
- 1 teaspoon almond extract
- 1 1/2 teaspoons ground cinnamon
- Caramel Sauce:
- 1 cup sugar
- 1/4 cup water
- 1 tablespoons lemon juice, freshly strained or bottled
- 2 tablespoons unsalted real butter
- 1 cup heavy or whipping cream

Preheat oven to 350 degrees. Soak raisins in rum while completing rest of recipe. Grease a 9 X 13 pan with butter flavored shortening. Evenly distribute bread cubes in greased pan and crack all eggs in large bowl. Using hand mixer or whisk, throughly combine eggs, milk, heavy whipping cream, sugar, melted butter, vanilla and cinnamon. Pour egg mixture over cubed croissants. Drain raisins and distribute over bread and egg mixture. Lightly press raisins just under the top of pudding so they won't burn. Bake uncovered at 350 degrees for 40-50 minutes. Test with a knife inserted into center of pudding--should come out clean. Let stand 5-10 minutes before cutting. Caramel Sauce: In a small saucepan, bring sugar, water and lemon juice to a boil. Reduce heat to medium and cook until sugar is dissolved and color turns a golden brown or amber. Stir in butter until it melts then add cream. Remove from heat and serve warm sauce drizzled over top of warm bread pudding.
Notes: I don't know what the calorie count is, and I don't want to know. You can substitute regular day old bread, but it just doesn't taste the same.
