Bourbon Balls for Tea


Looking for for a unique chocolate candy for your next party? Try these little homemade truffles with bourbon.



Ingredients:

  • 1 (6 oz) semi-sweet chocolate chips  
  • 3 T light corn syrup  
  • 1/4 C good bourbon  
  • 1/2 C vanilla sugar  
  • 1 1/4 C crushed vanilla wafers (about 36)
  • 1 C finely chopped pecans        
  • chocolate shavings        
  • OR dipping chocolate

Method

Melt chocolate chips in double boiler over just simmering water. When melted, remove from heat. Blend in corn syrup and bourbon until smooth. Stir in vanilla, sugar, cookie crumbs, and chopped nuts until well mixed. When cool enough to handle, roll mixture into little balls about the size of a filbert nut. Roll firmly in chocolate shavings to coat. OR skewer on a hat pin and dip into dipping chocolate. Place on wax paper lined cookie sheet with sides, or jelly roll pan. Repeat until done. Cover pan with plastic wrap and chill balls, at least 3 hours or over-night. Wrap in candy wrappers when quite cold, if desired. Serve at room temperature if it's not too hot.

Notes: My Grandma almost always made these for formal tea parties and really special grown-up occasions. I'm sorry I don't know the recipe she used for the dipping chocolate. All I remember is, it had melted paraffin wax to make the coating shiny and less apt to melt. If you know this recipe substitute rinsed beeswax from a honeycomb sold for eating.
