blueberry frozen yogurt

Interesting homemade frozen yogurt flavored with blueberries. All you need is an ice cream maker and a little bit of time for a great healthy snack.
Ingredients
- 1. 1 lb frozen blueberries
- 2. 2 cups low fat yogurt
- 3. 2 Tablespoons Balsamic Vinegar
- 4. 1/6 cup sugar
- 5. 8 teaspoons sugar substitute (4 packets of Equal)
- 6. pinch of salt
- 7. pinch of freshly ground pepper
- 8. pinch of freshly ground coriander

1. make yogurt cheese by placing 2 cups yogurt in a coffee filter lined strainer or funnel ... leave overnight to drain off liquid ...funnel/strainer should be placed within a container so liquid has a place to drain out 2. Defrost the blueberries in the microwave. I have found that 1 lb usually takes about 4-6 minutes on high 3. Place blueberries in a blender and blend until smooth. When smooth add salt, pepper, coriander, sugar, sugar substitute and balsamic vinegar. Pulse the blender several times to mix...add in 1/2 the blueberry liquid left after defrosting the blueberries pulse several times more 4. Follow the directions that comes with an ice cream machine ... alternately adding the yogurt cheese and blueberry mixture until all ingredients are in the ice cream machine The frozen yogurt can be served immediately or frozen
Notes: I have found that if the remaining blueberry liquid is mixed with chocolate syrup it makes a great topping Officially this recipe makes 8 servings. However, I found because it is so low in calories and fats and carbs; I double the portion and it serves 4 The recipe, as it uses blueberries, provides antioxidants, fiber, and calcium in healthy quantities
