Black and White Peppermint Bark

Dark and white chocolate with the refreshing taste of peppermint.
 

Ingredients

  • 18 ounces white chocolate, divided
  • 1 1/4 cup peppermint crunch baking chips, divided
  • 8 ounces bittersweet chocolate
  • 1/3 cup heavy cream
  • 1/2 teaspoon peppermint extract

Method

Draw a 9 x 12 inch rectangle on a large sheet of parchment paper. Place parchment, printed side down, on a large baking sheet. Melt 12 ounces of white chocolate and pour into center of rectangle and spread to cover. Sprinkle 3/4 cup peppermint chips over chocolate. Allow to set for about 15 minutes. Meanwhile, combine bittersweet chocolate, cream and extract in a small microwave safe bowl. Microwave until chocolate is melted and smooth. Cool to lukewarm and spread evenly over white chocolate. Melt remaining white chocolate and spread evenly over dark chocolate. Sprinkle remaining peppermint chips over warm chocolate. Chill until just set, about 15 - 18 minutes then break into chunks.

 

Notes: This would also be a fun recipe for Valentines Day. If you can't find peppermint crunch baking chips (Andes) crushed peppermint candy may be used instead.
