This recipe for fudge is cooked to the soft-ball stage. It uses cocoa powder and granulated sugar, with milk, maple syrup, butter and a little brandy.
In a large 4-quart saucepan, mix together sugar and cocoa; stir in milk and maple syrup.
Mix well. Cook on medium high, stirring constantly until mixture boils. Turn heat down to medium. Let mixture cook until it reaches soft ball stage on a candy thermometer.
Remove from heat; add butter, vanilla & brandy; let cool until temperature reaches 110F stir mixture, being careful not to scrape sides of pan. Pour into buttered 8 by 8 pan. Score and cut into serving pieces.
