Best Peach Cobbler

Fresh peaches baked and a crumbly cake-like topping made with baking mix, cereal, almonds and coconut.
Ingredients
- 2 cups powdered baking mix
- 1 1/2 cups Wheetabix cereal biscuits, crushed
- 1 stick salted butter
- 1 3 oz package sliced almonds
- 1 cup sweetened flaked coconut
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1 1/2 cups Splenda
- 8-10 fresh ripe peaches
- 2 tbsp tapioca
- 3/4 cup orange juice

In bowl combine baking mix, crushed Wheetabix, 1/2 cup Splenda, 1/2 tsp cinnamon, 1/2 tsp nutmeg, almonds, coconut and butter. Cut butter into mixture with a pastry cutter or a fork until pea size crumbs form and set topping aside. Peel and slice peaches into a large bowl. Add remaining cinnamon and nutmeg, tapioca and orange juice. Add remaining 1 cup Splenda, more or less to taste. Toss together and pour into a 13 x 9 x 2 inch cake pan that has been sprayed with a nonstick cooking spray. Add topping to peaches and spread out to cover. Bake in a 350 degree oven for 40 minutes.
Notes: Two brands of powdered baking mix to try are Jiffy or Bisquick.
