Bean Pie

The filling for this unusual pie is a puree of cooked navy beans, eggs, butter, brown sugar, flour and spices, baked in a pie shell.
Ingredients
- 5 eggs
- 2 cups cooked & drained navy beans
- 2 cups packed light brown sugar
- 1 cup butter, melted
- 1/3 cup all-purpose flour
- 3 teaspoons vanilla extract
- 1 1/2 teaspoons nutmeg
- 1 1/2 teaspoons cinnamon
- 3/4 teaspoons mace
- 3 or 4 frozen pie shells

Method
Put eggs in blender; cover and blend until mixed. Add all other ingredients (except pie shell) to blender. Cover and blend until mixed well. Pour mixture into 3 or 4, frozen pie shells and bake in a 400 degree oven for 35-40 minutes, until pie tests done.
Notes: This recipe makes 4 regular pies, if using the smaller, regular size frozen pie shells, or 3 deep-dish pies.
