Banana Coconut Pudding Cake


An easy, but elegant dessert--vanilla cake filled with pudding and topped with coconut and icing.



Ingredients:

  • 1 box vanilla cake mix
  • 3 egg whites
  • 1 1/4 cup water
  • 1 banana (to replace butter) or add 1/3 cup butter
  • 2 vanilla pudding cups
  • 1 container white icing
  • 1 bag coconuts flakes

Method

Preheat oven to 350 degrees. In a large bowl mix cake mix with egg whites, water and 1 smashed banana. Blend all ingredients together and once mixed, pour into two buttered round 9 in pans. Place in oven and bake for 20 minutes. Remove from oven and let cool for 30 minutes. Once cooled, remove from cake pan and place on a plate. Hollow out cake bottom and add pudding mix into it, put other cake on top of bottom cake and cover with icing and coconut flakes.

Notes: You can have your cake and eat it to.
