Banana Twinkie Bread Pudding

Ingredients:

10 Twinkies, cut into bite size pieces
3 cups Milk
3 Eggs
⅔ cup Sugar
2 Very Ripe Large Bananas
1 Tbsp Ground Cinnamon
¼ tsp Ground Nutmeg
½ tsp Pure Vanilla Extract
½ cup Dried Cherries or Sweetened Dried Cranberries
½ cup Pecans, lightly toasted
3 Tbsp Unsalted Butter Cut Into Small Pieces
Topping:
¾ cup Heavy Whipping Cream
1 Tbsp Sugar
¼ tsp Vanilla Extract
Sauce:
⅔ cup Unsalted Butter, room temperature
½ cup Packed Light Brown Sugar
6 Large Ripe Bananas, sliced
1 tsp Ground Cinnamon
¼ tsp Ground Nutmeg
3 Tbsp Dark Rum or 1 Tbsp. Rum Extract
2 Tbsp Banana Liqueur or Strawberry Banana Juice
1 tsp Vanilla Extract

Directions:

Preheat oven to 300. Butter a 9 x 13 inch baking dish. Put the Twinkie pieces in a large bowl. In blender, mix the milk, eggs, sugar, bananas, cinnamon, nutmeg, and vanilla and process until smooth. Pour over Twinkie pieces. Fold in the cherries and pecans. Transfer mixture to prepared baking dish and let stand for 20 minutes.Top with the butter. Cover baking dish with foil and put it into a larger pan. Put the pans in the oven and pour hot water into larger pan to a depth of 1 inch. Bake for 1 hour, then remove the foil and bake uncovered for 15 to 20 minutes, until a knife inserted just off center comes out clean. To make the topping, whisk or beat cream in a bowl jut until it begins to thicken. Add the sugar and vanilla and continue beating until soft peaks form, Cover and refrigerate. To make the sauce, heat a large saute pan or skillet over low heat. Add butter and brown sugar and cook, stirring gently, until melted and smooth. Add bananas, cinnamon and nutmeg and cook for 1 to 2 minute until bananas just begin to soften. Stir very gently so as not to break up the bananas. Remove pan from heat and add rum and liqueur. Return pan to heat, add vanilla and stir well. Remove from heat and keep warm. To serve, put a large scoop of the Twinkie pudding in middle of each plate or bowl. Spoon some sauce over each piece. Top with whipped cream and serve at once. Serves 12
