Banana Split Cream Pie

A creamy no-bake pie with bananas, pineapple, strawberries and a chocolate swirl on top.
 

Ingredients

  • 1 9 or 10 inch chocolate graham cracker crust
  • 3 tbsp cornstarch
  • 1 14 oz cans sweetened condensed milk
  • 3 egg yolks
  • 2 tbsp butter
  • 2 tsp vanilla, divided
  • 1 14 oz can crushed pineapple, juice reserved
  • 1 cup reserved pineapple juice plus 2/3 cup water
  • 8-10 large strawberries, divided
  • 3 medium bananas, divided
  • 1/4 cup fresh squeezed lemon juice, 2 tbsp reserved
  • 1 pint heavy whipping cream
  • 2-3 tbsp chocolate sauce
  • 1 tbsp confectioners sugar
  • 1/2 toasted coconut, if desired
  • Multicolored Jimmys or sprinkles, if desired
 
Method

Pie Filling: In a heavy saucepan, dissolve cornstarch in juice and water mixture. Stir in sweetened condensed milk and egg yolks. Cook and stir continuously, over medium high heat, until mixture is thick and bubbly. Remove from heat, add crushed pinapples, 1 tsp vanilla and butter, then mix well and cool slightly. Slice 2 bananas 1/8-1/4 inch thick and place in a shallow dish with lemon juice, rotating to cover. Slice 6-8 strawberries as above and set aside. Drain banana slices on a paper towel. Arrange bananas and strawberries on bottom of pie crust, overlapping berries. Pour cooled pudding mixture over bananas and strawberries evenly then allow to cool to room temperature. Using a plastic cover from pie crust, cover pie and refrigerate 2-4 hours, or until set. Topping: Whip together confectioners sugar, remaining vanilla and whipping cream then refrigerate. To serve: Remove pie from refrigerator, it may be necessary to wipe off any condensation. Slice remaining banana and place in 2 tbsp lemon juice, tossing to coat, remove to paper towels to drain. Slice remaining strawberries and set aside. Spread whipped cream over entire pie to desired thickness then garnish with bananas, strawberries, toasted coconut and Jimmys. Using a tablespoon, swirl the chocolate sauce over entire pie, or addto each individual slice.
