Banana-Chocolate Chip Crumble Cake

This coffee cake contains whole wheat flour and flaxseed meal, mashed banana and chocolate chips, plus a topping made with pecans and almonds.
Ingredients
- Topping:
- 1/3 cup brown sugar
- 1 Tablespoon flour
- 2 Tablespoons softened butter
- 1/2 cup chopped pecans
- 1/4 cup slivered almonds
- Cake:
- 1 3/4 cup white (all-purpose) flour
- 1/4 cup whole wheat flour
- 1/4 cup flaxseed meal
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup sugar
- 1/3 cup softened butter
- 1 teaspoon vanilla
- 2 eggs
- 2 ripe bananas, mashed (2/3 cup)
- 3/4 cup milk
- 3/4 cup chocolate chips

Preheat oven to 350 degrees and grease a 13x9" baking pan. For the topping, mix brown sugar, flour, butter and nuts together in a small bowl, or even a food processor, until crumbly. Set aside. Combine the dry ingredients for the cake in a small bowl. In a large mixing bowl beat the sugar, butter, and vanilla. Add the eggs one at a time, beating after each is added. Stir in the bananas until mixed in. Gradually add dry ingredients alternately with milk, beating at low speed. If mixture seems too dry, and a little more milk as needed. Fold in chocolate chips. Pour into prepared pan. Sprinkle the topping over the cake mixture. Bake about 35 minutes until golden brown and sides pull away from pan. Cool on wire rack.
Notes: This is the best banana coffee cake you'll ever eat!
