Modify your basic microwave popcorn with this baked caramel corn recipe. Not only does it taste great, it also makes an easy holiday gift or house-warming present.
Heat oven to 250 degrees. Over medium heat, combine first 4 ingredients and boil for 5 minutes. Remove from heat; stir in baking soda, add vanilla. Stir well. Pour over popped corn and mix thoroughly, coating all the popcorn.
Bake in a large roaster or pan for 1 hour stirring every 15 minutes. Remove from oven; cool completely. Break apart and store in tightly covered container.
