Baked Alaska with Italian Cookies

Baked Alaska is a dessert sure to impress your friends--this version uses biscotti cookies for the base. Very easy and fast to make.
 

Ingredients

  • 1 package of your favorite Italian biscotti
  • 1 pint cherry ice cream
  • 6 egg whites
  • 1/2 cup sugar
 
Method

Heat oven to 500 degrees. In an 8 x 8 square cake pan place biscotti. Put ice cream right from freezer onto biscotti. Place in freezer until meringue is ready. In small bowl beat egg whites until foamy. Beat in sugar one tablespoon at a time; continue to beat until meringue is stiff and glossy. Cover ice cream and biscotti sealing edges well. Bake about five minutes or until meringue is light brown.

 

Notes: If you have any more crumbs or biscotti left crush them and sprinkle over meringue when the Alaska comes out of the oven.
