Autumn Apple Cheesecake


A blend of two favorites--creamy cheesecake and the flavors of baked apples. A perfect fall dessert.



Ingredients:

  • Crust:
  • 1 1/4 cups graham cracker crumbs
  • 1/2 cup pecans, finely chopped
  • 3 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup margarine, melted
  • Filling:
  • 2 8 oz pkgs cream cheese, softened
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla
  • 2 eggs
  • Topping:
  • 3 cups sliced apples
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup pecans, chopped

Method

Preheat oven to 325 degrees, In a medium size mixing bowl, combine graham cracker crumbs, pecans, sugar, and margarine. Press into bottom of a 9 inch springform pan. Bake 10 minutes and remove from oven. For filling, beat cream cheese until fluffy then add sugar and vanilla; beat until smooth. Add eggs one at a time, mixing on low speed after each one. Beat just until blended then pour over crust. In another bowl, toss apples with sugar and cinnamon. Spoon this mixture over filling. Sprinkle with pecans. Bake about 70 minutes or until center is set. Run a knife around rim of pan to loosen cake. Cool completely before removing sides of pan. Chill 6-8 hours before serving.

Notes: This is a great recipe for fall or the holidays.
