Autumn Tart Cheesecake

This cheesecake has autumn written all over it from the raisins and cranberries to the walnuts on top. Sure to be appreciated any time of the year though.
 

Ingredients

  • 2 large Granny Smith apples, peeled cored and thinly sliced (about 2 cups)
  • 2 tbsp lemon juice
  • 1/4 cup low calorie margarine, melted
  • 1 cup low fat butter crackers, crushed
  • 1 tsp ground cinnamon, divided
  • 1 1/4 cups granular sugar substitute
  • 4 8 oz packages low fat cream cheese, softened
  • 1/2 cup egg substitute
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch
  • 1 cup fat free sour cream
  • 1/2 cup raisins
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, chopped
  • 2 cups water in oven proof bowl

Method

Preheat oven to 350 degrees. Spray a 9 X 13 X 2 baking pan with nonstick spray. Place apples in large bowl, sprinkle with lemon juice, stir to coat, and set aside. In medium bowl with fork, mix together margarine, crackers, 1/2 tsp cinnamon and 1/8 cup sugar substitute. Press mixture into bottom of prepared pan. Bake for 8 minutes or until golden brown. Set aside to cool. In a small bowl mix together remaining 1/2 tsp cinnamon and 1/4 cup sugar substitute, and set aside. Using electric mixer on medium speed, cream together cream cheese and remaining sugar substitute until smooth and creamy, about 2 minutes. Mix in egg substitute, vanilla and cornstarch until well combined. Stir in sour cream. Pour cheesecake batter into prepared pan and smooth. Place apple slices evenly on top and sprinkle with cinnamon and sugar substitute mixture. Sprinkle raisins, cranberries and nuts evenly on top. Place bowl of water at back of oven. Place cheesecake in middle of oven and bake for 45-50 minutes. Bake until middle will jiggle slightly when shaken. Remove from oven, cool on wire rack for one hour. Cover with plastic wrap and chill for at least 8 hours.

 

Notes: WONDERFULLY LOW FAT AND LOW IN SUGAR, I MAKE THIS A LOT FOR POTLUCKS AT WORK AND USUALLY NO ONE CAN TELL IT'S NOT THE REAL THING.
