Autumn Apple Trifle

The cinnamon raisin bread that you use for this recipe can make or break the dessert. Use fresh crusty bread and you are off to a great start.
 

Ingredients

  • 1 loaf cinnamon raisin bread
  • 1 cup chopped walnuts
  • Apple mixture:
  • 10 Granny Smith apples
  • 1 tablespoon cinnamon
  • 2 tablespoons brown sugar
  • Juice of 1 lemon
  • 2 tablespoons unsalted butter, cut into small pats
  • 1 teaspoon real vanilla
  • Custard:
  • 4 cups milk
  • 6 eggs
  • 2/3 cup sugar
  • 1/4 teaspoon salt
  • 1 vanilla bean
  • 1/8 teaspoon nutmeg
  • Whipped cream:
  • 1 quart heavy cream
  • 3 tablespoons sugar

Method

Cut bread up into 1 inch cubes and set aside. Peel and slice apples. Saute with all other ingredients until tender, 7-10 minutes. Set aside to cool. For the custard, open and scrape vanilla bean, add to milk and scald. Beat eggs then add sugar and salt to eggs. Continue stirring while adding hot milk, continue until mixture thickens. Cover with plastic wrap until ready to assemble trifle. Put cream in mixer and beat until it starts to stiffen. Slowly add sugar and continue beating until stiff peaks form. Begin layering trifle, beginning with bread, apples, custard, walnuts, and whipped cream. Continue layering your trifle dish, ending with whipped cream. You can garnish top with a sprinkle of cinnamon or cherries.
