Autumn Apple Dessert Pizza

Vanilla pudding is in the crust of this tasty dessert. The toffee frosting is creamy and goes perfectly with the apples.
Ingredients
- Cookie Crust:
- 1 cup butter
- 1 1/2 cups confectioners sugar
- 1 package sugar free instant vanilla pudding mix
- 1 egg, beaten
- 1 teaspoon vanilla
- 2 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tarter
- Toffee Frosting:
- 1 8 oz package cream cheese, softened
- 1/2 cup brown sugar
- 1 tablespoon vanilla extract
- 1 cup toffee pieces
- Apple Topping:
- 2-3 large honeycrisp apples, sliced thin
- 1/4 cup fresh lemon juice
- Butterscotch Glaze:
- 1 cup butterscotch chips
- 2 tablespoons creamy peanut butter
- 1 tablespoon vegetable oil

Method
In a mixing bowl, cream butter and sugar until fluffy. Add pudding mix, egg and extracts. Combine flour, baking soda and cream of tartar then gradually add to creamed mixture and mix well. Cover and refrigerate at least 1 hour. After dough has chilled, gently press cookie dough into a 13 X 9 greased baking dish. Bake at 350 degrees, for 13-15 minutes, or until light golden brown. Allow cookie crust to cool completely. In a small mixing bowl, combine softened cream cheese, brown sugar and vanilla extract then mix until smooth. Fold in toffee pieces and set aside until ready to use. Slice apples thinly, dipping each slice in lemon juice to delay browning. When cookie is cool, frost with toffee cream cheese mixture and cut into squares. Place 3-4 apple slices on each square and set aside. Combine butterscotch chips, peanut butter and oil then heat in microwave for 1 minute, stirring at 30 second, 40 second and 50 second intervals. Place melted product in plastic resealable bag. Cut off one corner of bag and use to drizzle glaze over pizza. Store in refrigerator until ready to serve.
