Aunt Dolores' Strawberry Cheese Cake

A filling made with cream cheese, sugar and eggs is poured into a graham cracker crust, pressed into a rectangular baking dish instead of the usual springform pan. The filling is topped with a sweetened sour cream mixture, then chilled. The squares of dessert are served with sweetened strawberries.
 

Ingredients

  • Crust:
  • 18 graham crackers
  • 1/4 lb. Butter, melted
  • 1 tsp. white sugar
  • Dash of cinnamon
  • Filling:
  • 2 8-oz. pkgs. cream cheese, softened
  • 1 cup sugar
  • 1 tsp. vanilla
  • 3 eggs
  • Topping:
  • 1 pint (16 oz.) sour cream
  • 1/4 cup sugar
  • 1 tsp. Vanilla
  • Fresh strawberries, sliced or halved
  • Sugar
 
Method

For crust, finely crush graham crackers and combine with butter, sugar and cinnamon. Press onto bottom of a 9x13-inch glass Pyrex dish; set aside. For filling, beat together cream cheese, the 1 cup sugar, and vanilla. Add eggs, one at a time, beating at low speed just until combined. Pour into crust-lined dish. Bake at 350 degrees about 25 minutes or until filling is just set. For topping, stir together sour cream, 1/4 cup sugar and vanilla. Spread over filling and bake 5 minutes more. Cool, then chill. To serve, cut into squares and top with fresh strawberries sweetened with a little sugar.
