Applesauce Rum Cake with a Dark Rum Glaze

A hearty cake with applesauce and rum, topped with a butter and rum flavored glaze--serve warm for a special treat.
Ingredients
- 2 cups sugar
- 3/4 cup butter, unsalted
- 2 eggs
- 2 cups all purpose flour
- 1/4 cup dark rum
- 2 teaspoons cinnamon
- 2 teaspoons soda
- 1/2 teaspoon salt
- 2 cups applesauce
- 1/2 cup chopped nuts
- Dark Rum glaze:
- 1/4 pound of unsalted butter
- 1/4 cup water
- 1 cup sugar
- 1/2 cup dark rum

Method
Cream sugar and butter in large bowl. Add eggs and beat until creamy. In a separate bowl, mix flour, cinnamon, soda and salt. Add to sugar and butter mixture. Mix until combined. Add applesauce, rum and nuts, then mix until smooth. Pour cake mixture into a greased 10 x 13 inch baking pan and bake in a 350 degrees oven for 30-40 minutes or until done. Top with dark rum glaze follows. Dark Rum glaze: Melt butter in a medium saucepan over medium heat. Add water and sugar. Stir well while bringing to a boil. This should take about 5 minutes. Remove from heat and stir in rum. Remove from heat and pour over cake.
Notes: This cake is great served with hot peaches and whipped cream.
