Applesauce Rum Cake with a Dark Rum Glaze

A hearty cake with applesauce and rum, topped with a butter and rum flavored glaze--serve warm for a special treat.

2 cups Sugar
¾ cup Butter, unsalted
2 Eggs
2 cups All Purpose Flour
¼ cup Dark Rum
2 tsp Cinnamon
2 tsp Soda
½ tsp Salt
2 cups Applesauce
½ cup Chopped Nuts
Dark Rum Glaze:
¼ lb Unsalted Butter
¼ cup Water
1 cup Sugar
½ cup Dark Rum


Cream sugar and butter in large bowl. Add eggs and beat until creamy. In a separate bowl, mix flour, cinnamon, soda and salt. Add to sugar and butter mixture. Mix until combined. Add applesauce, rum and nuts, then mix until smooth. Pour cake mixture into a greased 10 x 13 inch baking pan and bake in a 350 degrees oven for 30-40 minutes or until done. Top with dark rum glaze follows.

Dark Rum glaze:

Melt butter in a medium saucepan over medium heat. Add water and sugar. Stir well while bringing to a boil. This should take about 5 minutes. Remove from heat and stir in rum. Remove from heat and pour over cake.

Helpful Tips:

This cake is great served with hot peaches and whipped cream.
