Applesauce Rum Cake With a Dark Rum Glaze

Ingredients:
| 2 cups | Sugar |
| ¾ cup | Butter, unsalted |
| 2 | Eggs |
| 2 cups | All Purpose Flour |
| ¼ cup | Dark Rum |
| 2 tsp | Cinnamon |
| 2 tsp | Soda |
| ½ tsp | Salt |
| 2 cups | Applesauce |
| ½ cup | Chopped Nuts |
| Dark Rum Glaze: | |
| ¼ lb | Unsalted Butter |
| ¼ cup | Water |
| 1 cup | Sugar |
| ½ cup | Dark Rum |
Directions:
Cream sugar and butter in large bowl. Add eggs and beat until creamy. In a separate bowl, mix flour, cinnamon, soda and salt. Add to sugar and butter mixture. Mix until combined. Add applesauce, rum and nuts, then mix until smooth. Pour cake mixture into a greased 10 x 13 inch baking pan and bake in a 350 degrees oven for 30-40 minutes or until done. Top with dark rum glaze follows.
Dark Rum glaze:
Melt butter in a medium saucepan over medium heat. Add water and sugar. Stir well while bringing to a boil. This should take about 5 minutes. Remove from heat and stir in rum. Remove from heat and pour over cake.
Helpful Tips:
This cake is great served with hot peaches and whipped cream.
