Apple Pecan Pie


A combination of two favorite pies in one. This pie is perfect for the holiday season.



Ingredients:

  • Apple filling:
  • 1 cup peeled and cubed apples, Golden Delicious or Empire
  • 1/2 cup sugar
  • 1 tablespoon flour
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp clove
  • 1/2 tsp apple cider vinegar
  • 1/2 tsp melted butter
  • 1 prepared 9 inch pie crust
  • Pecan filling:
  • 1/4 cup melted butter
  • 3/4 cup white corn syrup
  • 3/4 cup brown sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • 2 eggs, room temperature and beaten
  • 2 cups pecan halves  

Method

Apple filling: Preheat oven to 350 degrees. In a large bowl, combine dry ingredients. Add vinegar and butter, and then mix thoroughly. Toss in apples and coat. Pour mixture into prepared pie crust. Pecan filling: Melt butter in microwave. In large bowl, mix together butter, corn syrup, brown sugar, salt, and vanilla. Combine until thoroughly mixed. Slowly add in eggs. Pour filling over apple filling. Top with pecan halves. Wrap foil around pie crust edges to prevent burning. Bake about 40 minutes. Remove foil and continue to cook for an additional 20-25 minutes.
