
A batter of eggs, sugar, butter, goat cheese and flour is topped with thin slices of apple, sprinkled with sugar, then baked.
Heat oven to 400 degrees F. Mix sugar with eggs, butter, cheese and salt. Stir in flour. Divide evenly into 6 individual buttered and sugared nonstick pans or rings. You may also use a 9-inch spring form pan or cake pans lined with parchment paper. Overlap slices of apple on the batter; sprinkle with sugar. You will use about 1/2 of an apple per individual clafouti. Sprinkle with more sugar. Bake until set.
Notes:
Any good cooking apple can be used in this recipe.
