Apple Pie Cheesecake

A creamy cheese cake layered with apples and cinnamon in a crust made with vanilla wafers.
 

Ingredients

  • 3 8 oz package cream cheese
  • 3 large eggs
  • 1 1/2 tsp vanilla extract
  • 14 vanilla wafers
  • 1 cup sugar
  • 2 apples, peeled and sliced
  • 1 tsp plus cinnamon
  • 1 tsp butter
  • 1 tbsp water
  • 8 or 9 inch springform pan

Method

Preheat oven to 350 degrees. In a small sauce pan combine water, butter, 1/4 cup sugar, apples and cinnamon. Cook on medium high until apples are cooked and sauce is jelly-like, and then set aside. In a large mixing bowl combine 3/4 cup sugar and cream cheese; beat until well combined. Add eggs and vanilla extract; mix until smooth. Place vanilla wafers in a bag and crush. In an 8 inch springform pan spray butter flavor cooking spray, then pour crushed wafers in and spread around. Spread half of cream cheese mixture in pan, then spread apple mixture and top with other half of cream cheese mixture. Sprinkle cinnamon on top and bake for 38-45 minutes. After cooking is done, cool for at least 4 hours before serving.

 

Notes: A stand mixer is the one to use.
