Apple Drippin's

This mixture of sliced apples, white and brown sugars, spices and a little lemon juice is cooked down to the desired consistency and also thickened with a little powdered pectin, before being canned in pint jars.
Ingredients
- 10 pounds Fuji Apples
- 2 cups Water
- 2 tablespoons Butter
- 2 tablespoons Lemon Juice
- 3 tablespoons Cinnamon
- 3 cups White Granulated Sugar
- 1 cup packed Brown Sugar
- 1/2 teaspoon Ground Cloves
- 1/2 teaspoon ground Nutmeg
- 2 tablespoons powdered Sure-Gel Pectin

Peel, core, and slice apples. Add water and melt butter in 5-quart heavy saucepan to prevent burning. Put the apples in the pan. Stir in the lemon juice, cinnamon, sugar, brown sugar, cloves and nutmeg. Simmer, covered, over medium heat for 1 hour. Remove 3 cups liquid from pan and save. Stir in pectin and cook for two more minutes. Next, use mixer or chopper of some kind to puree the apples. If the Apple Drippins' are too thick you can add some of the removed liquid to thin. If they are too thin then uncover and cook to the desired thickness. Spoon into 16-ounce (pint) canning jars and process according to safety guidelines from USDA. Refrigerate after opening. Properly sealed it will last for 1 year.
Notes: This recipe was made up from an old apple butter recipe that my grandmother had. She used to make it for the family. Everyone loved it. She has since passed on and I inherited it. This is a really great topping for ice cream. If you warm it and put it on vanilla ice cream, it tastes like an apple pie a la mode without the crust. You can put it on waffles, pancakes, or even toast. You make it the consistency that you like, that is the best part.
