Apple Cottage Pudding

Ingredients:
| 1 cup | All Purpose Flour |
| 1 tsp | Baking Powder |
| ¼ tsp | Salt |
| ⅓ cup | Butter, room temp |
| ½ tsp | Vanilla |
| ½ tsp | Grated Lemon Rind |
| ⅓ cup | Sugar |
| 1 | Egg |
| ½ cup | Milk |
| 3 | Green Cooking Apples |
| ¼ cup | Sugar |
| ¼ tsp | Each Cloves, nutmeg and allspice |
| Sweetened Lightly Whipped Cream | |
| Cinnamon |
Directions:
Mix together flour, baking powder and salt, and set aside. Cream butter, vanilla, lemon rind, and 1/3 c sugar until well blended. Add egg and beat until fluffy. Add flour mixture alternately with the milk to the creamed mixture, and mix until a smooth batter forms. Peel, core, and quarter apples, and place in an 8 inch baking dish. Mix the 1/4 c sugar with the spices, and sprinkle half the mixture over apples. Pour batter over this, and sprinkle with remaining spiced sugar. Bake at 375 degrees for 40 to 45 minutes and serve hot with whipped cream and cinnamon.
