Apple and Maple Pecan Pie

Pure maple syrup is the secret sweetener in this irresistible blend of traditional apple and pecan pies.
 

Ingredients

  • 1 unbaked 9 inch pie shell
  • 1/2 cup butter at room temperature
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 3 eggs
  • 1 cup pure maple syrup
  • 1 cup peeled and grated apples
  • 1 cup chopped pecans
  • 3 mint sprigs
  • 4 cups frozen vanilla yogurt, optional

Method

Preheat oven to 350 degrees. Place crust in a 9 inch deep dish, or 10 inch regular, pie plate and flute edges. In a large mixing bowl, using a fork, stir butter and sugar together to mix. Stir in cornstarch. Beat in eggs one at a time. Beat in maple syrup. Fold in apples and pecans then pour into pie crust. Bake 50-60 minutes or until center of pie is not dry, but not runny. Twenty minutes into baking time, cover edges of crust with a pie shield or pieces of foil to prevent burning. Cool 45 minutes before serving. Top with mint sprigs for garnish. Serve topped with frozen vanilla yogurt, if desired.
