Aloha Watermelon Shaved Ice


A light, refreshing, icy dessert made with watermelon--fat free and low sugar too.



Ingredients:

  • 1/4 cup sugar
  • 1/4 cup water
  • 6 cups seedless watermelon, rind removed and cut into chunks
  • 1 tablespoon grated lime zest
  • 1/2 teaspoon kosher salt

Method

Combine sugar and water in a small sauce pan and bring to a boil over medium high heat, stirring occasionally. Cook until sugar is dissolved and liquid is clear, about 2 minutes. Set aside to cool completely. Put watermelon and cooled syrup in a blender and puree until smooth. Strain mixture through a fine mesh sieve into a large baking dish. Sprinkle zest on top. Cover with plastic wrap and place in freezer. Stir with a fork every 45 minutes to break up ice crystals, this keeps mixture light and fluffy. Once mixture is a completely frozen mound of shaved ice (about 2 hours and 15 minutes) stir in salt. Divide among eight bowls and serve immediately.

Notes: Any leftovers can be frozen in an airtight container for up to 2 weeks. Fluff with a fork before serving. This fat-free, low calorie dessert will almost make you feel like dancing the hula.
